Chow chow or Chayote squash is one of my favorite vegetable. I often make this simple Chow Chow Palya |Chayote Squash Stir-fry Recipe when I am in no mood to make a fancy curry. Since the kids too like this vegetable, there will be no complaits at the table.


This curry is made so often yet has never found a place on this blog.So last week, I made sure to click pics and post it up here.

This vegetable can be used in sambar, curries,kootu etc.A few days back I posted a Chow Chow payasa / kheer recipe. Until I tasted it, I couldn’t believe / accept that this vegetable can be used in a dessert!

Here is how to prepare Chow Chow Palya |Chayote Squash Stir-fry Recipe

Peel and chop the chayote squash. Microwave with just enough water till done. The vegetable should not get mushy.Drain the water and keep aside.

Heat oil in a pan and add mustard, cumin seeds, channa dal, broken red chilies and curry leaves. Once the mustard pops, add the cooked chayote squash, turmeric powder and salt.

Give it a mix, add grated coconut and mix.Remove from heat and transfer onto a serving bowl.

Ingredients
  • 1` number Chayote squash /Chow chow
  • 1 teaspoon Oil
  • 1 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 1 teaspoon Channa dal
  • 2 numbers Red chilies, broken
  • Curry leaves- a few
  • 2 teaspoons Grated coconut
  • 1/8 teaspoon Turmeric powder
  • Salt to taste
