Last month my friend had come down from The States. Our history goes way back to our parents time! Our fathers studied in the same school and then somehow lost contact until her dad was transferred to the place where I grew up.Then his daughter joined in the same school I was studying in and we became best friends. Then her family moved to another place and I lost contact with her. I did not hear from her after that.
Imagine my surprise when I met her parents at my wedding! Sensing that I was wondering how they knew about my wedding, they informed me that they lived right opposite to my in-laws home! I was over joyed!
Later I met my friend when she came down and we have been in touch since then. It is also nice that her daughter and Lil Angel were born just a few months apart! Now they are such close friends!
So, as I was telling you, my friend came down for a vacation and we spent time together and the kids had a gala time playing and running around the houses. We had a tough time bringing the kids back inside the house at night when they just would not leave each other!

When it was time for them to return, I made this cake for the kids as a snack when they got together to play. The cake was moist and they loved it.This recipe does not use butter / condensed milk, yet it is moist!
I used:
Adapted from :Rak’s Kitchen
All purpose flour – 1 1/2 cups
Cocoa powder- 3 tablespoons
Sugar – 3/4 cup, powdered
Oil-1/4 cup
Water- 1 cup
Vinegar-1 tablespoon
Salt- 1/4 teaspoon
Vanilla essence -1 tablespoon
Baking soda-1 teaspoon
Tutti frutti-1/8 cup
Chocolate chips-1/4 cup
Dust the tutti frutti with all purpose flour and keep aside.Sift together the baking soda, cocoa powder and all purpose flour. In a bowl mix water, oil, vinegar,salt and sugar.Mix well till the sugar dissolves completely.
Add the sifted flour little by little to the wet mixture and mix so that there are no lumps. So not over mix. Add the tutti frutti and chocolate chips and give it a quick mix. Pour into a prepared cake pan . Bake in a pre heated oven at 180 degrees for 15 minutes of till the cake is done. Remove from the oven and let it sit in the pan for 5 minutes. Invert it slowly over a wire rack and let it cool.
Serve as such or top it with chocolate frosting and sprinkles and some tutti frutti…
Note:
- I halved the recipe . Since that measurement will be very meager, I have given the original measurement as such.
- Oven timings will vary.
- You can use sugar as such instead of powdering it. But powdered sugar will dissolve faster.
- You can skip tutti frutti and chocolate chips.
- If skipping chocolate chips, increase the sugar to 1 cup
- Lemon juice can be used instead of vinegar.
- The cake is very moist and soft. Wait till it cools completely and then slice it.
