It’s hard to believe that we are in the final lap of the Fire Up Your Oven month long baking marathon!And I am sure my friends who are running this marathon with me will agree with this fact!!
For the final week I have taken the theme- Baking with herbs and spices. The herb of the week is an aromatic Middle Eastern condiment- Zaatar which is a herbal blend of wild thyme,dried sumac and sesame seeds.Sometimes other herbs / spices are also added to the blend.
I have been eyeing Zaatar for a long,long time and when Priya asked our Blogging Marathon buddies if we wanted anything from her place ,few of us asked for Zaatar. Though I was not sure of how it would taste or what to use it in, I was adventurous enough to be willing to experiment.
When the baking themes were finalized from my side, I wanted to add zaatar to one of the bakes and after watching the kids hog on the bake, I was so happy that my adventure was fruitful! Priya, thanks a bunch for sending it across…
I came across this recipe in Joumana’s blog. It seemed to be simple and a very quick bake too. And of course used Zaatar, so I made it almost as soon as I saw the recipe.
Matzo is a traditional passover dish and this has a Lebanese twist to it!A very crispy snack that goes well with tea / coffee.
The best part is the kids reaching out to the box in which I had stored it to have a few matzos whenever they felt like they needed something to snack on!
I used:
Adapted from: Taste of Beirut
All purpose flour -3/4 cup
Whole wheat flour-1/4 cup
Salt- to taste
Olive oil- 3 tablespoons + 3 tablespoons
Zaatar mix- 3 tablespoons
Water as needed
Take both the flour, salt in a bowl. Add 3 tbsp oil and mix.Add water little by little and knead to a smooth dough. Knead well for 5 minutes.
In a bowl mix together the zaatar mix and olive oil. Divide the dough into 5 portions. Roll out each portion as thinly as possible dusting a little flour if needed. Roll out into a free forming oval shape. Transfer the rolled out sheet onto a greased baking tray.Spread the zaatar mix over it [including the oil]
Bake in a pre heated oven at 200 degree C for 5 minutes. Keep an eye on the matzo from 3 minutes onwards.The matzo will puff will lightly . Carefully remove the tray and flip it over. Bake for another 3-5 minutes till brown spots appear on the surface and the sides are brown.Do not over bake.Remove from the oven and place on a wire rack. Repeat for the other portion of dough in the same way
Enjoy crisp zaatar matzo with a cup of tea.Store the remaining in an air tight container..

Even I was surprised how good this spice mix is when I used for the Sept BM. Matzo looks like a nice snack and can imagine how amazing it must have tasted with zaatar

Matzos look so crunchy.. Perfect to munch on with those amazing middle east flavors. I have yet to use the zaatar Priya sent.
Matzah is usually so bland. The Zaatar must give it awesome flavor.
That must be one flavorful matzo. I had noted down the recipe during the last mega marathon and couldn't do it.

It is only recently that I found out that matzo can be made at home. I thought they had to be bought ๐ Love the addition of zaatar to matzo — they sound flavorful and look crispy.
