Easy Peanut Raita Recipe with step by step pictures
When the theme for the mega marathon was listed out, I looked out for easy everyday recipes. My kiddo wanted something that she and her bro would enjoy. And I wanted something that would require very less planning and gets done quick and with the ingredients already present in the pantry.
The second reason was why this dish was born.We had some extra curd in the fridge and a lone carrot that looked sad. So used these two in the raita along with the peanuts.
Peanuts are being featured this week in the protein rich dishes series . Along with the protein from peanuts, curd is another source.
This can be served with briyani / pulao / other flavored rice varieties. Or you can have it as a snack just like I did!
Step by step method to prepare Easy Peanut Raita Recipe
Coarsely powder the peanut. Whisk yogurt with salt.
Reserve a couple of teaspoons of the ground peanuts and mix the rest to the curd. Add grated carrot, finely chopped coriander leaves.Mix well
Serve garnished with the reserved coarsely ground peanuts, a sprinkle of red chili powder.
Note:
- Tastes best when served chilled
- Chill the raita until serving time. Add the garnish just before you serve it.
- Cucumber can be added along with / instead of carrots.
- You can also sprinkle chaat masala / pepper powder instead of red chili powder.
A refreshing raita to go with briyani / Pulao
- 1/2 cup Roasted Peanuts
- 2 cups Curd / Yogurt
- 1 small Carrot, grated
- 2 tablespoons Coriander leaves, fienly chopped
- A large pinch Red chili powder
