Rava Appam Recipe | Karthigai Deepam Recipe with step by step pictures
This recipe has been on my mind for a very long time. I finally made it today after my nephew nudged me to post something on the blog today being Karthigai Deepam.
Karthigai Deepam / Karthigai Vilakku is the Tamil Festival of Lights.It falls on full moon day of the Karthigai month [mid November to mid December].Small earthen lamps are light around the house.
Several speical dishes are made on this day and one of them is this appam.This Rava Appam Recipe is very simple and easy to prepare and also makes a great snack for kids and adults.
There are two ways that you can make this dish. I have made both of them here – the deep fried version and the low fat version where the batter is cooked in a paniyaram / abelskevier pan
The appams in the bowl is the low fat version and the ones beside the bowl is the deep fried version.
A simple dish made on Karthigai Deepam day.
- 1/2 cup Fine Rava
- 1/2 cup Maida / All Purpose Flour
- 1/2 cup Sugar
- 1/8 teaspoon Baking soda
- 1 teaspoon Hot oil
- 2 teaspoons chopped coconut pieces
- A pinch of salt

Take the rava in a bowl and add water till immersing level and mix well. The mixture should not be too soggy.Cover and keep aside for an hour

To this mixture add sugar, maida, coconut pieces,hot oil, baking soda, salt and mix well

Add water little by little and make a thick batter like idli batter

Heat a paniyaram pan with a little oil and pour till 3/4 of each mould .Cook on each side till brown in color

Or, heat oil in pan and gently drop a small ladle of batter into the batter and deep fry till golden brown in color.
- The dish was mildly sweet.Add more sugar if you have a sweet tooth.
- Broken cashew pieces can be added instead of coconut pieces.
Step by step method to make Rava Appam Recipe for Karthigai Deepam
Take rava in a bowl and add water till immersing level.Mix well and set aside for an hour or so.
To the soaked rava add sugar, maida,coconut pieces,salt,baking soda and mix. Add hot oil.
Mix well and make a thick batter like idli batter consistency. Heat a paniyaram pan with a little oil in each mould.Pour the batter into moulds and flip them over gently after a few minutes. Cook on both sides till brown in color.Once done, remove from the pan.
Another method to make this is by deep frying the batter. Heat oil and gently drop in a small ladle full of batter into the oil. Deep fry till golden brown on both side. Drain and remove onto a plate.

Note:
- The quantity of sugar used imparted a mild sweetness to the dish.We liked it this way. You can add more sugar if needed.
- Broken cashew pieces can be used instead of coconut pieces.
- Do not let the batter rest for too long after it has been mixed.Make the appams immediately.

Karthigai Deepam is always incomplete without some appams on the side. Loved the recipe and the use of Rava. Also, the cooking technique of deep frying and the appe pan version. Both great and not to forget, the appams look delicious. No one can eat just one.
