We are on the 5th alphabet today in the A-Z series of flat breads and this Ellu Holige Recipe | Sesame Filled Sweet Flatbread was the first dish that got written on the list.
Ellu is sesame seeds in Kannada and Holige is a traditional sweet flatbread from Karnataka. Holige is also goes by the name Obittu. This ellu holige is from North Karnataka region.
I wanted to make this on Krishna Janmashtami day working on the ‘To kill two birds with a stone’ proverb. I figured it could be the sweet dish for the festival and a tick on the list A-Z flatbread list as well.
When I discussed this with mom I realized the proverb would not work that day. She told me that we [our family] don’t prepare sweets with sesame seeds on auspicious days as it is mostly used for / during ancestral stuffs.
So I prepared another sweet for Lord Krishna and made this one yesterday.
The traditional version uses Maida / refined flour but I have used Whole wheat flour here. The stuffing is made with powdered sesame and jaggery. Coconut and cardamom can be added/ optional. I did not add both.
There are so many versions of this recipe out there and I just made this simple, no-fuss version which the kids enjoyed a lot.
Step by step method to preapre Ellu Holige Recipe | Sesame Filled Sweet Flatbread
Take the whole wheat flour and a big pinch of salt in a bowl and mix well. Add water little by little and knead to a smooth ,non sticky dough. Apply a little oil on the ball of dough, cover and keep aside till we make the filling.
Roast the sesame seeds in a pan and when it starts popping, transfer it onto a plate to cool. Take this roasted sesame seed and jaggery in a mixie jar and pulse a couple of times to powder both. Don’t let the mixie run on high speed for long as it will become very sticky.Just pulse it a couple of times till you get a powder.
Now, pinch out golf sized balls of dough and dust a little flour if needed and roll out into a small circle. Place 2-3 teaspoons of sesame-jaggery powder on it. The quantity depends on the size of the holige you will be rolling out.Bring the edges together and make a ball.
Gently roll it out into a circle. Cook on a heated tawa , drizzling a little ghee on both sides. The holige puffed up like poori!!! Cook till brown spots appear on both sides. Remove from heat. Repeat for the remaining dough.
Serve warm drizzled with ghee.

Ellu and jaggery taste amazing together. With that as the stuffing, this holige must taste divine..

A filling with black sesame seeds..wow.. that’a a great way to include these healthy seeds in one’s diet. A great dessert option.
