One of the recipes that have been in bookmarks for a long time is this Makuni Recipe | Bihari Sattu Stuffed Paratha Recipe.
Sattu is powdered fried gram dal and this dish uses the ground dal powder and some spices as a filling. The resultant paratha is so yum and filling!
In one of the previous editions of Blogging Marathon, I made this Cooling Sattu ka namkeen sherbet and ever since I made that my mind was fixed on making this sattu stuffed paratha.
When I was looking for recipes that start with M,I found a lot of them but they seemed mundane. Then I found this alternate name for sattu stuffed paratha and I was over joyed!
I made this during tea time and we had it with our evening coffee. It tastes good on its own and does not require any side as well.

Step by step method to prepare Makuni Recipe | Bihari Sattu Stuffed Paratha Recipe
Take wheat flour, salt in a bowl and mix well.
Add water little by little and knead to a smooth non stick dough by adding a little oil at the knead. Knead and keep aside.
For the filling take sattu, green chili, onion, ginger, garlic,coriander leaves, ajwain, kalonji,salt,pickle oil, oil in a bowl and mix well. Add little water and mix into a dough.
Pinch out a golf sized ball of dough and flatten it. Place a portion /small ball of the sattu mixture and bring the edges together.
Flatten it and roll out into 4″ circle. Cook on a heated griddle till brown spots appear on both side. Remove from griddle and repeat for the remaining dough.
Serve with a side of your choice.

- 1 number Onion chopped
- A handful chopped Coriander leaves
- 1/2 teaspoon Ajwain
- 1/2 teaspoon Kalonji
- 1/2 teaspoon Pickle Oil
- 2 teaspoons Oil, divided
- 1 teaspoon Ginger garlic paste / Grated ginger and garlic
- 2 numbers Green chilies, deseeded and chopped
- Salt to tastw

The sattu paratha looks super and it is interesting to learn a new name for this paratha.
The stuffing with pickle is making me drool , and I love it ., it’s almost like the stuffing of Litti that I made for L .

Especially that stuffing rocks. pickle oil in stuffing makes its more interesting. Makuni looks absolutely prefect to have without any side dish. Bihari Makuni rocks PJ.

I did not know that the sattu roti had a name by itself. Looks perfect PJ and we are learning so much in this flatbread BM.
Sattu based paratha is not only healthy, but yum as well. My maid made it once in the breakfast and my whole family loved it, but didn’t have any idea about its name. She called it sattu paratha only. Good to know about its name, I can boost off about my knowledge of Bihari cuisine 😀
nice to know that sattu paratha is also called as makuni paratha. I love bihari sattu paratha, for me it is perfect to carry along while travelling. great recipe with the letter M.
