If you have been following my blog, you would have noticed that I am part of a group that posts baked dishes 3 days a week, all through December. And that event is called Bakeathon. This eggless Chocolate Cranberry Cookies Recipe is my fourth bake for the event.
My eggless basic cookie dough is proving to be a blessing in disguise! I had already signed up for 4 weeks of Blogging marathon #95 and didn’t sign up for bakeathon. But I gave in to the temptation when my friends discussed about their bakes and then the kids added fuel to the fire by lamenting that its been ages since I baked!
So I just asked them for flavors and gave choices and their suggestions were taken into account for making the list.
With the ingredients I had and the time needed to bake, I made sure I had a few cookies with the basic cookie dough.
I just need to add flavorings and add ons to make some varieties that will tide me over for a few days.
I realized that I din’t make any chocolate flavored cookies with the cookie dough and decided to pair it up with the cranberries I had left. And some chopped pistachio left over from the Rose pistachio cookies also went into this dough.
Adding nuts is optional but it does add to the crunch and flavor to the cookies.
I was worried that over working the cookie dough will affect the texture of the cookies, but luckily the cookies turned out great!
Step by step method to prepare Chocolate Cranberry Cookies Recipe
In a bowl, take the cookie dough and add cocoa powder, chopped cranberries, chopped nuts. Crumble the dough and add milk little by little so that you get a nice dough.
Take a portion of the dough and roll it out into 1/2 cm thick circle. Using cookie cutter punch out the desired shapes. Transfer the cookies onto a tray lined with parchment paper. Bake @ 180 degrees in a pre heated oven for 8-10 minutes . Once done, transfer onto a cooling tray.
Once completely cooled, serve / store in an air tight container.
Note
- If the cookie dough is frozen / kept in the fridge, let it come to room temperature before you use it.
- The cookies will be soft as soon as they are baked. It will turn crunchy once it cools down.
- The yield will depend on the size of cookie cutter used.
- The baking time will vary depending in the size and thickness of the cookie.
- Using pistachio is optional but it adds a nice crunch to the cookies.
