One of the many ways to make a fussy kid eat vegetables is by serving them this multi colored Uthappam! This Sago Vegetable Uthappam recipe is very simple to prepare but I can vouch that kids will really love the colors on the dosa and eat it without a fuss!
While you can make this with the regular dosa batter, I tried it with Sago Dosa Batter.
The plain uthappam was soft with a crunchy exterior and with all the vegetables, it was a treat to the eyes and the palate!
Here is how to prepare the Sago Dosa Batter
I used:

- Sago / Sabudana – 1 cup
- Whisked Curd- 2 cups
- Rice Flour- 3 cups
- Salt to taste
Method:
- Soak the sago in the curd for about 4-5 hours.
- Once it doubles in volume, grind it in a mixie / wet grinder. The batter should be smooth without traces of the sago pearls.
- Transfer the batter into a bowl and add the rice flour and salt.
- Whisk well so that there are no lumps.
- If the batter is too thick add a little water and mix.
- Keep aside for 7-8 hours / overnight to ferment
- Once fermented, mix well and use it to make dosa / uthappam
- Store the excess batter in the fridge and use as needed.
If making uthappam, cover and cook it so that is nice and spongy on one side and brown and crispy on the other side. No need to flip the uthappam.
Now,there is no specific recipe for the vegetable Uthappam actually.But here is what I did:
- Spread a ladle full of batter [but not as thin as a dosa] on a heated griddle.
- Top it up with finely chopped tomato,capsicum and onion,grated carrot and sprinkle some idli podi
- Drizzle oil around the edges and cover and cook for a couple of minutes in low flame till the uthappam is cooked.
- Remove from griddle and serve hot with a side of your choice.
Note:
- You can add / skip vegetables to what is available or what you prefer.
- Since we cover and cook, I there is no need to flip the uthappam.
- You can add grated cheese over the vegetables and serve it as Dosa Pizza!!

Sago Uttapam is very innovative , and looks very attractive with those colous . I am sure the addition of podi must be making it super delicious .

Sago uttapam is different and interesting recipe. This look so colorful with all those toppings.

This looks like nice and soft uttapam with sago. I make a different type of pancake, but loved this uttapam verion with veggies.
