This Zucchini Kootu recipe was a part of the Lunch series I posted earlier. I had prepared this on a weekend it had the family favorite dishes.
Zucchini Kootu Recipe is so easy to make and the peanut seasoning added to it in the end gives it an extra flavor. Be sure not to miss that!

In a small pressure cooker, add oil and when it heats up, put in mustard, cumon, split white urad dal, channa dal, broken red chilies, curry leaves and wait for the mustard to pop and the dal to turn light brown.
Add chopped tomatoes and chopped Zucchini.
Give it a mix and add moong dal and water.Put in turmeric powder and kootu podi, salt.
Close the pressure cooker and let it cook for 15 minutes on medium flame / 3 whistles. Once the pressure releases, open the cooker and mix the kootu. Keep aside.
In a small pan heat oil and add peanuts and curry leaves. Once the peanuts are roasted, pour over the kootu and mix.
Delicious Zuchini kootu is ready to be served with hot steamed rice.
A simple side for steamed rice made with Zucchini and moong dal flavored with a homemade spice mix.
- 1/2 tsp Mustard seeds
- 1 tsp Split white urad dal
- 1/2 tsp Cumin seeds
- 1/2 tsp Channa dal
- 2 no. Red chili
- 2 sprigs Curry leaves
- 1 no. Tomato, large, chopped
- 2 no.s Zucchini, peeled and chopped
- 1/2 cup Moong Dal
- 1 1/2 cups Water
- 1/2 tsp Turmeric Powder
- 2 tsp Kootu Powder
- Salt to taste
- 2 tsp Oil, divided
- 2 tbsp peanuts
- 1 sprig Curry leaves

I didnโt know that you had a kootu powder ! This is new to me , so you make it at home or is it store bought ?
I am sure there must be a lot of variations of a kootu , but whenever I have made it , I have never used tomatoes .

I love to make such kottu. I make dudhi and chana in this way. Will try it with Zucchini next and this south Indian version with yummy tempering.
