Pearl Millet / Kambu / Bajra is a gluten free millet with a valuable nutrient profile.I had some kambu grits and used it to make this dosa.
This recipe is from Priya’s Blog which is being featured in this months edition of Tried and Tasted hosted here.The original recipe uses corn grits ,since I did not have it I skipped it.Instead I pulsed the millet grits for a few seconds so that there were still some grits left to give the dosa a good texture.
This dosa was delicious and the aroma while cooking the dosa was really awesome!!!We had it with Tangy and spicy garlic chutney,also from her blog.

I used:
Pearl millet grits-2 cups,coarsely ground
Quick cooking oats,roasted and powdered-2 cups
Curd-1 cup
Onion-1,finely chopped
Cumin seeds-1 teaspoon
Asafoetida powder-a pinch
Curry leaves-a few
Salt to taste
- In a large vessel add all the ingredients and add enough water to make a thick batter
- Heat a griddle and pour a ladle full of batter and spread it to a circle.[You will not get a perfect circle because we have added onions which will not be easy to spread.].I did not drizzle oil,you can if you wish.
- When the edges leave the griddle,flip it over and cook for a minute.
- Remove from heat and serve with a spicy side dish.
Note :
You can also saute the oil before adding to the batter
The batter can also be seasoned with mustard,urad dhal, red chillies.
