This chutney is an essential ingredient for most chaat items.This chutney can be prepared well in advance and refrigerated.If you make this in a large quantity,you can freeze it and use when required.Any time you feel like indulging / serving a chaat as snack, all you need to do is take out the jar of chutney from the freezer, let it thaw and use it in the desired recipes.As simple as that..
I used:
Dates ,deseeded – 10 numbers
Tamarind – a golf sized ball
Jaggery , powdered- 1/2 a cup[Increase the quantity if you like a sweeter chutney]
Chilli powder- 1 teaspoon
Salt to taste
- Take tamarind, dates, jaggery, chilli powder, salt and 3 cups of water in a pan.
- Mash all the ingredients so that they combine well.
- Simmer till it thicken,around 15-20 minutes.
- Cool and puree.
- Strain and use or store in the refrigerator / freezer
If the chutney is watery, heat it till you get the desired consistency.

This is so simple but I often do not get 'that' particular taste or balance often!
dates is certainly a delicious and healthy addition..
I make it alwyas with dates and tamarind…thats the best combo for thsi chutney….best for chaat too!
