This is one of the dosa recipes that I wanted to experiment with for a very long time and the time seemed apt when Hema Vijai of Aromatic Cooking Challenged me with just the ingredient that could make this dish!!
I was partnered with Hema for this month in Priya’s Shhhhh Cooking secretly Challenge. She challenged me with Urad dal and Walnuts and I chose Bananas and corn flakes for her.Check out her innovative and tempting creation here….
So since I wanted to make this dosa, I found the perfect chance to do so for this event! This dosa need only soaking time and the batter can be used as soon as it is ground. So that makes it almost instant, right! And it tastes best hot off the griddle.
Urad dal is protein rich and a good source of Vitamin B It is very good for health as it is also a good source of fibre…
I used:
Black whole urad dal – 1 cup
Idli rice- 1 cup
Cumin- 1 teaspoon
Red chili- 2
Asafoetida powder- a large pinch
Salt to taste
Optional
Finely chopped onion and coriander
Idli milagai podi
Soak the rice, urad dal, red chilies in enough water for about 4-5 hours. Wash and drain out the water. Take the mixture in a mixie jar and add cumin seeds.
Grind to an almost smooth batter adding water as needed. Remove the batter into a large bowl.Add asafoetida and salt and mix well. Add a little water if it is too thick. The batter must be similar in consistency to that of the regular dosa batter.
If using later, store it in the fridge, else continue as below.
Heat a griddle and pour a ladle full of batter in the centre. Spread to a circle.Drizzle oil around the edges if needed. Spread the onion, coriander and milagai podi on the top. Cover and cook on low flame. When the dosa is done, the edges will come off the pan. Lift if up gently and transfer into a serving plate
Serve hot with sambar and chutney…
Note:
This can be made like the regular dosa with out the topping. In that case you can flip it over and cook on both side.
You can also add pepper corns while grinding instead / along with red chilies.
