First let me start with a non-food topic. After much procrastination and deliberation, my blog has a new home now! Yes, I have shifted to my own domain[yesterday]!! I am pretty excited about it and I just can’t stop talking about this to any one I meet!
This was something I wanted to do ages back but kept postponing it. Now after chatting up with my Blogging Marathon buddies and other blogging buddies, I decided to get it done and now here I am , in a brand new home!
So it is only fair to celebrate the move with a dessert and a healthy one would be most welcome!
I made this Phirni,a creamy and tasty dessert made with milk, ground rice and sugar. To make it healthy, I used Karumbu Sakkarai which is the unrefined cane sugar. This is supposed to be healthy and way better than using sugar as sweetener.
Also to add another dose of health and a change of texture, I added a few pan roasted bananas to the pudding. Well, call it my inventiveness or the Master Chef Series influence,the end result was super good!
The pan fried bananas are crispy on the top and bottom and soft on the inside and are so addictive and guilt free.
I used:
Milk-2 cups + 1/4 cup
Rice flour- 2 teaspoons
Unrefined cane sugar / Karumbu sakkarai – 4 teaspoons / Adjust to taste
Ripe but firm banana- 1
A pinch of salt
A few drops of oil
Mix the rice flour in 1/4 cup of milk and keep aside. Heat milk and add the unrefined cane sugar and stir to mix. When he cane sugar has dissolved, add the rice flour mixture. Simmer and let it thicken.Once the desired consistency is got, remove from heat and allow to cool. Once completely cool,[chill if you prefer], spoon out into a serving dish.
Heat a pan and add a few drops of oil on the pan and brush lightly. Place the banana slices and cook on high for 2-3 minutes. Turn them over gently one by one. Once both the sides are brown and look caramelized remove from pan and keep aside. While still hot, sprinkle a wee bit of sugar over the pan fried bananas.
Serve the pudding garnished with the pan fried bananas…
Note:
- Regular sugar or any other sweetener can be used.
- Use bananas that are ripe but firm .Else the bananas will turn mushy on the pan.
- I used my cast Iron pan for pan frying and got a really crunchy crust.
- Can drizzle a bit of honey before serving
- The pan fried bananas made a great topping for ice creams, pancakes, etc.They taste great on their own too..
