This fried rice is from a Sanjeev Kapoor TV show – Khana Khazana. The moment I saw this I wanted to make it as it looked very colorful and I am a sucker for One pot meals esp those with rice.So I made this one weekend and I really loved the way it turned out.This is a very simple and quick dish for a busy weeknight dinner as well!Also check out this other version of Mexican Rice I posted some time back…


Not sure if this is an authentic dish but it sure makes a great one pot meal and especially great coz its good for the lunch box too!

I used:

Rice- 1/2 cup
Colored capsicum -1/2 cup, chopped
Onion-1, chopped
Tomato-1,chopped
Chili paste- 1 teaspoon
Tomato sauce- 1 teaspoon
Garlic-2 pods, chopped
Oil-1 teaspoon
Salt to taste
Coriander leaves to garnish

Cook the rice so that the grains are separate and spread on a plate and keep aside.

Heat oil in a pan and saute onion and garlic till the onion is soft. Add tomato and cook for a minute.
Add the chopped bell pepper, chili paste, tomato sauce.

Add salt and saute for a few minutes. I like a little crunch on the capsicum.You can cook till the capsicum is soft. Add the cooked rice and mix well.Simmer for a couple of minutes for the flavors to blend.

Remove from heat and serve…
