A couple months back, we went to the mall and after all the actual shopping and the window shopping,we decided to head to the food court. There, in one of the restaurants, was this masala Kuzhi paniyaram. Thinking that it was some special type of paniyaram, we ordered that and we were utterly disappointed with what we got. There were a few pieces of vegetables inside the paniyaram and there was no masala or anything else to suggest that it was special!
That’s when I thought we can make a version of kuzhi panyaram with vegetables!And thus was born this dish.
I made this one weekend and the dumplings just disappeared!The kids enjoyed them and we had this with coffee.
This snack is for Blogging Marathon #48, Week 2,Day 2 under theme Nasta Time. Nasta is a slang for tiffins served at breakfast / as snacks.
I used:
Idli batter as needed
Carrot-1,small,finely chopped
Beans-5,finely chopped
Onion-1, small finely chopped
Mustard- 1 teaspoon
Split urad dal- 1 teaspoon
Chana dal- 1 teaspoon
Curry leaves- a few,chopped
Coriander leaves- a handful chopped
Oil- 1 teaspoon
Salt if needed
Take the batter in a bowl.Heat oil in a pan and add the mustard, urad dal and channa dal. When the mustard pops and the dal turns brown, add onion and curry leaves. Saute till onion till soft and add the veggies[forgot to click this step].Cook for a few minutes and pour into the batter. Add the coriander leaves, salt of needed[batter already has salt] and mix well.
Heat a paniyaram pan and pour the batter into the moulds. Cover and cook on medium flame. After a few minutes, remove the lid and check. The paniyaram will pull itself from the sides. Carefully turn them over with a wooden rod/ spoon. Cook till that side also turns brown.Remove from pan.
Serve as a snack with tea/ coffee
Can be served as such / with chutney…
