Almost a decade ago, we had a couple of Banana trees in our backyard. We tended it with utmost care and enjoyed eating out of the fresh Banana leaves whenever we felt like. The banana leaf possesses so many good qualities that it improves the digestion and maintains health .
Then came the time when it bore fruits. And I must say they was quite a huge bunch.The bananas were so big that the otherwise tiny seeds looked like a papaya seed!Can you imagine!!We passed around a couple of dozens to our neighbors and enjoyed the rest.
Then after a while when new plants started growing, the garden became to crowded and all sort of insects, creepy,crawly things made their presence felt. So dad thought it was best to clean off the backyard.
And talking of bananas, I made some cookies with the over ripe banana that no one wanted to even look at!
After more than a week of sweet baked goodies, today we have a cookie. This is one from my bookmarks. I must admit that the texture is a bit ‘rustic’. I did not roll them out smoothly and the cookies looked like some were smiling, some scowling and others gave a bored look!But looks can be deceptive!
The taste was so good that the kids finished the whole batch in half an hour. I really didn’t mind it as its made of whole wheat, less of butter and has the goodness of banana.
I used:
Adapted from– Tamalpaku
Banana-1,medium sized
Wheat flour-1/2 cup
Butter- 1 tablespoon
Powdered sugar- 1 tablespoon
Baking powder-1/4 teaspoon
Salt- a pinch
Milk – a few teaspoons
Choco chips as needed
Mash the banana with a fork and set aside. Sieve together the flour, baking powder and salt.
Take that mixture in a bowl and add the powdered sugar. Mix and add softened butter.Rub in in.Add the banana puree and mix. Add milk a teaspoon at a time and knead to a smooth ,stiff dough.
Cover and set aside for 30 minutes.Add the choco chips and incorporate the choco chips into the dough.Divide into small portions and roll in balls. Placed on a tray lined with a baking tray.Flatten and gently press in a few more choco chips. Bake in a pre heated oven at 200 degrees for 15-20 minutes, till the edges turn crisp and the bottom is light brown[oven timing will vary]
Remove from oven and transfer to a wire rack to cool.It will be soft but will turn crisp after cooling…

hmm.. I think most of the cookies are smiling.. You should see my cookies, you will find all kinds of shapes. I should try banana cookies next time I have over ripe bananas.

Banana is a wonderful substitute I have tried it in cookies, and these cookies look very tempting.
