After the Oats Mania, Chia is the new craze at home! I have been trying out and experimenting with these wonder seeds. One of the simplest dishes that uses Chia is a pudding. There were so many varieties of chia based puddings and I made one with pineapple.


The surprising fact with this dish is that Lil Angel enjoyed it a lot! She is usually not in favor of such type of dishes and this one is surely an exception.This is very easy to put together and the chilled pudding makes an excellent after school snack…

Pineapple Chia Pudding is for Srivalli’s Kid’s Delight event, hosted this month by Sandhya with the theme Snacking all the way, which also happens to be the theme I have taken for Blogging Marathon #54, Week 2.

I used:

Chia seeds- 1 tablespoon
Coconut milk-200 ml + extra if needed
Sugar to taste
Pineapple pieces as needed

Soak the Chia seeds in coconut milk,sugar and set aside. I left it overnight in the fridge. It needs to soak for atleast4-5 hours to swell up.

In a small bowl/serving dish, take the chia seeds and add a layer of pineapple and  keep layering  till the bowl is almost full.

Serve garnished with a few pieces of pineapple.

Note:
  • If the pudding is too thick, dilute with coconut milk
  • Instead of coconut milk, soy milk/ almond milk etc can be used.
  •  You can also replace pineapple with a fruit / fruits of your choice.
  • Add sugar to suit your taste.I used only 1 teaspoon sugar.

  1. Ah in that case you would actually be for so many like the kiwi etc right..:)..anyway I am surprised your lil ones enjoy chia..so good yaar..

  2. I have never made a pudding with chia seeds even though I've seen it on many blogs. You are tempting me to try my hand at making this pudding soon.

  3. I have bought the seeds even for the visiting relatives but not have tried it in my kitchen so far. The pudding must be yummy even if the little one liked it.
