This quick potato fry is my kids favorite curry. They will even eat a meal that is not to their taste if there this curry on the table. Yes, it is fried, but for kids ,its ok to have once in a while right!
I pack this with curd rice / pulao / tamarind rice in their lunch box. It also doubles as a second curry on the table but other curry has to be one non-potato and non fried vegetable!
Sometimes the kids have it as a snack too.As and when a batch is ready, they will sneak out with the bowl and come back in two minutes for a refill!!

This curry is delicious and it does get done fast and its my kids fav too!
A simple and crispy potato curry that will becomes everyone's favorite!
- 4 numbers Potatoes
- 2 tablespoons Corn flour
- 1 teaspoon Red chili powder adjust to taste
- To taste Salt
- To deep fry Oil

Peel the potato and cut into half.

Heat a little water in a pressure cooker and parboil the potatoes. I cooked it for 1 whistle.

Once the pressure releases, discard the water and remove the potatoes. Cut them into bite sized pieces.

Take the cubed potatoes in a bowl and add the red chili powder, salt ,1 teaspoon oil and cornflour.Mix to combine.

Heat oil in a pan and gently drop the potato cubes into the oil.

Deep fry till golden brown.Drain and keep aside.Repeat for the remaining batches.
Step by step tutorial
Peel and cut the potatoes into two.Take them in a pressure cooker with at little water. Parboil them. I pressure cooked it for 1 whistle.Once the pressure releases, remove the potato from the cooker.
Cut the potatoes into bite sized pieces. Take them in a bowl. Add chili powder, salt, corn flour and a teaspoon of oil. Mix well to coat.
Heat oil for deep frying and fry the potato cubes till golden brown. Drain and keep aside. Repeat for the rest of the batches.
This can be served with any rice variety…

This one I am sure is everybody’s favorite..when you have said stir fry I thought you had sauteed it..
Though it is simple, it surely would be a super hit with my daughter too. Looks awesome..

Never added corn flour. I Should try adding corn flour and air frying it ๐
