That phone call came as a rude shock one evening. I could not believe my ears and it looked like the world was slipping beneath my feet.Yet, I had to believe the words!


Mom was in the hospital gravely injured and it was so hard for me to see her like that. I gathered up all the courage I could muster and maintained my calm and spoke to her.

Even through all the stuffs that was going on around her, she seemed to recognize me. That was a huge relief!A week’s stay in the hospital and a surgery later, we came home.

A billion thanks to the prayers that were uttered for her recovery. Through out this huge ordeal, my blogging marathon friends stood by me, praying and giving me the courage to wade through the nightmare.

According to the surgeons who treated her, the recovery is nothing short of a miracle! Yes, I am so thankful to the Almighty for being able to see my mom back at home.

Since its vacation time and seeing their grandmom back at home , the kids asked for a treat – An ice cream actually! Mom convinced me to leave her for a while and go and get them some from the shop nearby. The kids enjoyed the treat and mom enjoyed watching them savor their treat!

Mom, a person who never asks for anything, suddenly said she felt like eating pista ice cream! I was so surprised! Instead of getting her something from the store, I made these mini pista popsicle a couple of days back and she had one.

How to make pista popsicle

I got this in the mini Popsicle mould last year and took this chance to use it.The kids had their fill of pista pops and I was over joyed to see the kids and my parents enjoy these simple pops.

This is my third post for Blogging Marathon #76, Week 2, Day 3, with the theme – Sweets for Mother’s day.

How to make pista popsicle

Step by Step method to make pista popsicle:

I used:

Pistachio nuts- 20
Milk-300ml
Pista milk essence- a few drops
Sugar as needed

Soak the pista in water for an hour or so. Remove and discard the skin.

Take the pista,around 50ml milk and sugar in a blender jar and grind to a smooth paste.

How to make pista popsicle

Take the milk in a vessel and add the ground paste. Add a few drops of the pista milk essence and mix well.

Pour into Popsicle moulds and cover them up. Place in the freezer till set. I left them over night. Before serving, show them under running water and demould gently.

Note:

  • Adding ground pistachio nuts is optional
  • If you have powdered sugar, you can add it directly to the milk
  • You can use paper cup if you don’t have Popsicle moulds.
