Eggless Marble Cupcake Recipe with step by step pictures.
With two more recipes needed to complete Bakeathon, I was looking for something easy yet something that would look good on the blog!I know it is too much to ask , yet I worked my grey cells to get something worthy to post.
I still don’t have a Zebra cake on the blog and thought that will be good one to make. Then comes the process of cutting and serving and the kids prefer cupcakes over such cut and serve type of cakes.
So the Zebra cake got converted into a marble cupcake!
I used the Basic Eggless Vanilla Cake recipe and made this one. You can use any vanilla cake recipe that you have been following so far.
A simple cake with a marbled design.
- 1 1/2 cup All purpose flour sifted
- 1 cup Thick curd/ yogurt
- 3/4 cup cup Powdered sugar
- 1/2 cup Oil
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking soda
- 2 teaspoons Cocoa Powder

Add the sugar to the curd and mix till it dissolves.

To this mixture ,add the baking powder and baking soda. Mix and leave aside for a few minutes

.Once you see small bubbles on the surface, add the oil and the essence and mix well.

Into this mixture add the all purpose flour little by little and mix well.

Divide this mixture into two parts

Keep one aside. To the other part, add the cocoa powder and mix to combine,but do not over mix

Line a muffin tray with paper liners and alternate spoonfuls of plain and chocolate batter till 3/4 of it is filled.Using a toothpick/fork/knife create swirl patterns

Bake in a preheated oven for 12-15 minutes/ till a skewer inserted in the center comes out clean.

Remove from tray and let it cool on a wire rack

ย Step by step method to prepare Eggless Marble Cupcake Recipe
Take sugar and curd in a bowl,mix till sugar dissolves. Add baking powder and baking soda and stir. Set aside for a few minutes till it bubbles and becomes frothy. Add oil and mix well.ย
Add flour little by little and make a batter without lumps. Divide it into two parts.Leave one part aside. To the other part , add cocoa powder and mix well.
Line a muffin tray with liners. Add a tablespoon of white colored batter and alternate it with cocoa batter. Fill till 3/4 of the liner. Using a toothpick,knife/fork, make swirl patterns on the batter.
Bake in a pre heated oven at 180 degrees for 12-15 minutes / till a skewer inserted into the center comes out clean. Remove from oven and transfer to a wire rack to cool.
Enjoy the soft and delicious marbled cup cakes!
Note:
- The number of cupcake got from this recipe will vary with the size of the muffin tin / liner used.
- The quantity of sugar can be adjusted. This one was just sweet enough.
- The baking time may vary on the size of the cup cake
- This can be baked in a square / round tin as well.
- The cup cakes are very soft when taken out of the oven.Wait for a few minutes and then transfer them to a wire rack gently.

Lovely marble Cakes , though you could have made these into mini zebras , they would have taken time and patience but would look cute .
