Eggless Oatmeal Raisin Bundt Cake Recipe with step by step pictures
As much as I wanted to post yet another Christmas Fruit Cake recipe, I could not get around baking one! With the kids at home on vacation, my work load has doubled! By the time I get a few minutes free, all I want to do is sit quietly and ‘enjoy’ the few minutes of ‘rest’!
Finally, I got around to baking these Eggless Oatmeal Raisin Bundt Cake Recipe which is choke-full of healthy stuffs.
The other reason why I chose to bake this is I had to post a bake for the bakeathon and kids delight event that I am hosting and wanted to combine both the themes together.
This bundt doubles as a smack and also can be served as a breakfast for kids. Now who doesn’t like a dessert for breakfast!
As mentioned earlier, this is full of healthy ingredients – Oatmeal, whole wheat flour, chia seeds, flaxmeal,raisins, jaggery and milk! It is eggless and butterless. The bundts are super soft and totally delicious! I am sure you will now agree that this is a good breakfast dish as well!
A healthy cake recipe that can even be served for the kids breakfast!
- 1/2 cup Oats
- 1/4 cup Raisins
- 1/2 cup Whole Wheat Flour
- 1/4 teaspoon Baking Powder
- 1/4 teaspoon Baking Soda
- 1 teaspoon Chia seeds
- 1 tablespoon Flax meal
- 1/2 cup Karumbu sakkarai / Cane Sugar
- 1/2 cup Milk
- 1/4 cup Oil

Powder the oats and keep aside. Mix the raisins with a teaspoon of flour and keep aside.

Take the oats flour, wheat flour,baking powder, baking soda, Chia seeds, flax meal and whisk well.

Take powdered cane sugar, milk,oil and whisk till the sugar dissolves.

Add the wet ingredients to the dry ingredients and mix gently.Add the raisins and combine gently.Add water, a teaspoon at a time, if the batter is too thick.

Pour into greased bundt mould and bake in a pre heated oven at 180 degree C for 10-12 minutes till a skewer inserted in the center of the cake comes out clean.

Let it cool a bit in the mould itself. Then gently remove it from the pan and cool completely. Serve!
- The baking time will vary with the size of the bundt .
- This can be baked as a cup cake too.
- Regular sugar / brown sugar/ jaggery can be used instead of karumbu sakkarai / un refined cane sugar.
- You can strain the wet ingredient mixture if you feel there may be impurities in the cane sugar. I did not as the one I used comes from without impurities.
- Do not remove the bundts from the mould when it is hot / warm. It will crumble. The cake is super soft, so remove only when it is lukewarm .
