Millets are occupying a very important part of the meal these days. Millets are so versatile and can be included in any course. Most of the times my folks are not sure which ingredient a dish is made of. When it comes to millets and certain vegetables I mask them in dishes where they go by unnoticed!This Multi-Millet Savory Porridge Recipe is one such where the presence of multi millet flour was totally not felt!
This Multi-Millet Savory Porridge Recipe makes a nice breakfast when you don;t feel like having a heavy meal in the morning. It is also very apt for those hot summer months where you can forego the mid morning cuppa and have this instead.
You can make this as thin / thick as you like. The consistency is totally your choice. The thinner one can be used as a mid morning / evening drink and a thick porridge can be had as a breakfast dish.
I had a little bit of various millets and roasted it all and prepared the flour. I used barnyard millet,bajra, red jowar and ragi flour . If multi millet flour is available in the stores, you can use that too.
Here is how to prepare Multi-Millet Savory Porridge Recipe
Take water in a pan and put in the flour. Whisk well so that there are no lumps. Heat this mixture on low – medium flame and keep stirring. The mixture will thicken .Let it cool. Take about 2-3 tablespoons of this mixture in a vessel.
Whisk yogurt with a little water and add it to the multi millet paste. Put in salt and whisk well.
Heat oil in a pan and add mustard and cumin seeds.When the cumin crackles, add curry leaves and red chilies. Pour it over the porridge and mix well.The porridge is ready to be served.
Serve garnished with coriander leaves.
Notes:
- I made the mutlimillet flour by roasting barnyard millet, broken bajra and red jower separately. Powdered it together after it cooled down and then added a little ragi flour.
- You can use store brought flour too.
- The same can be prepared with ragi flour / any other millet flour.

A simple porridge / kanji that can be had for breakfast / as an evening drink.
- 1/8 cup Multi millet flour
- 1 cup Water
- 1 cup Curd
- Salt to taste
- 1/2 teaspoon Oil
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- A few Curry leaves
- 1 number Red chili , broken
- Coriander leaves to garnish

My mom makes multi millet porridge and drinks almost everyday but her’s is not this tempting. Need to show her this recipe.
