The kids love almonds and this when served as cookies is an absolute delight to bite into!
These cookies too are made using the basic eggless cookie dough and I promise you this will be the last of the cookie that I made with the basic dough. Though I still have 2 more portions of it, I will save it for future use and am planning to post some cakes for the remaining days of bakeathon.
Here is how to prepare this Easy Eggless Almond Cookies Recipe
I used:
Eggless basic cookie dough recipe – 180 grams
Almond meal -1/4 cup
Milk as needed
Finely chopped almonds for garnishing
- Take the cookie dough in a bowl and crumble it.
- Add almond meal and sprinkle a little water and gently knead to a smooth non sticky dough
- Pinch out small balls and flatten them.
- Place on a baking tray lined with parchment paper.
- Place a large pinch of chopped almonds on the cookies and press it down gently.
- Bake in a pre heated oven @ 180 degree C for 10 minutes / till the cookies turn brown around the edges.
- Remove from tray and place on a cooling tray.
- Serve / store in an air tight container.
Note:
- Don’t add to much milk , it will make the dough very sticky. Add a few sprinkles of milk at a time.
- The cookies will be soft as soon as they are baked. It will turn crunchy once it cools down.
- The yield will depend on the size of cookie .
- The baking time will vary depending in the size and thickness of the cookie.

I am in awe of this cookie dough , can’t we make it with oil ? I always prefer oil based cookies even though butter makes them more delicious .
