Capsicum is one of the vegetables that are almost always present in the refrigerator.So when I run out of options I try new ways to use up capsicum and flavored rice is the best to experiment with. Simple yet flavorful is what I would call this rice.
This recipe joins Blogging Marathon #58,Week 2, Day 3 under the theme ways with rice.
I used:
Rice- 1 cup
Capsicum -1, chopped
Onion-1 sliced
Mustard seeds- 1 teaspoon
Kalonji – 1/2 teaspoon
Saunf- 1/2 teaspoon
Curry leaves- a few
Kitchen king masala- 2 teaspoons
Turmeric powder- a pinch
Salt to taste
Oil- 1 tablespoon
Cook the rice as you normally would and spread on a plate. It is best if the grains are separate.
Heat oil in a pan and add the mustard, kalonji, saunf and curry leaves. When the mustard pops add the onion and capsicum and saute till the onion in soft.Add the kitchen king masala, salt and turmeric powder and cook for a few more minutes. Add a splash of water if the mixture is too dry.
Put in the cooked rice and cook on low heat for a few minutes.Remove from pan and serve.
Serve with crisps/ raita / plain curd/ yogurt.

Rice presented in any form is always welcome at our table. The simpler the preparation is, the faster it gets over!
Never added kalonji.. Will try that. These mixed rices are perfect for lunch boxes
Never tried capsicum with that masala powder. The rice looks colorful and must have been flavorful.
Life saver in the mornings. I always have couple of bell peppers in the fridge.
I have heard about kitchen king masala but I somehow have never used it. Sounds interesting though.
