One pot meals are my favorite.They are such a blessing in disguise! When I need to make something really quick yet flavorful but do not plan to slog in the kitchen with the stirring or washing up pots and pan, I turn towards a rice based one pot meal..
This dish was born when we needed a hot meal after an outing and it had to be served as soon as possible as everyone was hungry.The fridge held bits and pieces of veggies and I used it all up in this dish.
This super simple dish is for Blogging Marathon #58,Week 2, Day 2 under the theme ways with rice.
I used:
Basmati rice- 1 cup
Chopped mixed vegetables- 1 cup / as much/ little as you prefer
[I used corn,mushrooms,carrot, cauliflower,beans,green peas,potato]
Methi leaves,fresh- leaves alone from a small bunch
Onion-1, thinly sliced
Cumin seeds- 1 teaspoon
Bay leaf- 1
Cloves- 2
Cinnamon stick – a small piece
Pulao masala-1 teaspoon
Turmeric powder- a large pinch
Salt to taste
Oil-1 tablespoon
Mint leaves to garnish
Wash and soak rice for half and hour. Drain and keep aside.
Heat oil in pressure cooker and put in cumin seeds. When the cumin seeds crackles, add the whole spices and xaute for a few seconds. Add the onion and cook till it turns soft.
Put in the methi leaves,vegetables and give it a good mix.
Add 2 cups of water[or the quantity you would normally add] and when it comes to a rolling boil, add turmeric, pulao masala, salt and mix well.Add the drained rice and pressure cook for 10 minutes or till the rice and veggies are done. Once the pressure releases, open the cooker and give it a gentle fluff-up with a fork.
Serve garnished with mint leaves with raita / plain yogurt..
Note:
- Garam masala can be used instead of pulao masala.
- You can use veggies of your choice.
