The next dish that I made with Quinoa is this delicious pudding. We are in the middle of Week 4 in the Mega Blogging Marathon #68 themed Cooking Carnival., and this week I am experimenting with Quinoa as I have chosen to feature this ingredient for the entire week.
The dessert is so easy to make and is vegan too! I have used unrefined cane sugar and enjoyed the last cup late one night when I had a sudden craving to eat something sweet. This guilt free dessert surely satiated my taste buds!
I used:
[For 3 small servings]
Cooked Quinoa – 1/2 cup
Grated coconut- 1/4 cup
Unrefined cane sugar- 1/4 cup [adjust to taste]
Cocoa powder- 1 heaped tablespoon
Salt- a pinch
Coconut milk – as needed
Colorful garnishes of your choice
In a mixer jar take the quinoa, grated coconut, cocoa powder and unrefined cane sugar.Give it a go in the mixie
Add a pinch of salt and a little coconut milk .Grind to a smooth texture adding more coconut milk if needed. It should not get too watery though. Remove from mixie jar and transfer onto a bowl. Chill for a couple of hours or serve immediately garnished with colorful sprinkles / candy!
Note:
- You can use any milk of your choice – regular milk or other vegan options
- Unrefined cane sugar can be substituted with regular sugar / honey/ any sweetener of your choice.
- I did not grind it to a smooth paste,I liked it with a little texture.
- Tastes best when served chilled
