I almost missed posting this Mint and Ginger Chia Fresca for Recipe Redux!!!

It is a very hot summer in my part of the world and around this time,we tend to look forward to drinks that cool us off!I had this drink in mind for a long time and almost missed the deadline!
Chia Fresca is a Mexican / Central American drink. It is made using water, chia seeds, lemon /lime juice and a sweetener .
I gave a small twist and made some additions and made this Mint and Ginger Chia Fresca.The addition was mint and ginger flavor and the twist was adding cane sugar as the sweetener instead of refined sugar.The use of soda water made it a mocktail making this drink fit for this months theme.
The kids are not fond of carbonated beverages.While I was making this one, Lil Angel wanted to know what I was doing and when she saw the bottle of Soda water [which I got just to make this drink], she knew I was up to some drink that was not recommenced for her!
After it got clicked, she could not resist her temptation and asked for a sip. I gave her half the cup and had the rest. She loved it but did not ask for more!
Here is how to make this Mint and Ginger Chia Fresca :
I used:
Chilled Soda Water – 300ml
Cane sugar- 2 teaspoons
Lemon juice- 1 tablespoon
Mint leaves- a few
Water- 50ml
Ginger- 1″ piece
Chia seeds- 1 tablespoon [ that has already been soaked,not raw]
Ice cubes
Mint leaves to garnish
- Muddle together mint leaves and ginger.
- Add water , cane sugar. Mix well and strain.
- Take 2 glasses and add a few ice cubes and 1/2 tablespoon chia seeds in each glass
- Divide the mint-ginger mix between the two glasses
- Top with chilled Soda water
- Serve topped with a mint leaf.
Note:
- You can use regular sugar instead of cane sugar / use can use any sweetener of your choice.
- Adjust the quantity of mint, ginger and lemon juice to suit your taste.
