Sheet Pan Meals
We love throwing ingredients together on a sheet pan and roasting for a simple sheet pan dinner. They make busy weeknights a bit more manageable. (And clean-up isn’t bad either!) Show us your healthy take on a sheet pan meal.
As soon as I saw this announcement on the Recipe ReDux page, my initial thought was -‘What are these sheet pan meals’?
The term itself was new to me but on the other side of the world[or maybe even around my place], this seemed to be gaining popularity or is already popular!
So the first thing I did was to find out what this is about and then went about researching the theme.
I looked for vegetarian options but either those ingredients are not available here or those were not liked by my family members.
So taking the ideas from the various sources on the net, I came up with this simple paneer and bell pepper cooked in a sheet pan. Paneer or cottage cheese is my kids favorite ingredient and I was sure that they would like it. I added colored Bell pepper/ capsicum to add color to the dish.
The kids had this over toast and both of them seemed to have fallen in love with it. So I have to explore more options with paneer and make a lot more of these sheet pan meals.
Yes, this is very easy, just throw in all the ingredients and bake on a sheet pan and as said in the announcement, clean up is easy too.
This recipe is just a basic one and you can add a lot more elements to it. As I mentioned above, I am planning to try out a lot more variations.
Step by step method to prepare Sheet Pan Paneer and Bell Peppers
Take the paneer in a bowl, add chili powder, tomato sauce, soya sauce,sesame seeds, grated ginger and garlic. Mix well and let it sit for a couple of hours in the fridge. I let it sit over night.
Grease a sheet pan and keep aside.Chop the colored capsicum and onions. Spread the vegetables and paneer in a single layer. Sprinkle salt/ seasoning.
Bake in a pre heated oven at 180 degrees for 10 minutes. Give it a stir and return to oven. Bake for another 5-8 minutes.
Serve as such / over a piece of toast.

- 1 block Paneer / CottageCheese
- 1/2 each Colored Bell Pepper
- 1 teaspoon Tomato Sauce
- 1 teaspoon Soy Sauce
- 2 teaspoons White sesame seeds
- 1 teaspoon ,each Grated Ginger and garlic
- Salt to taste
