Greens / Keerai sambar Recipe [ Pressure Cooker Method] with step-by-step pictures


As mentioned in my previous post, I love my pressure cooker and the pans and kadais that I have.

This simple greens sambar is something that I make when I am in a hurry to finish lunch preparation. The whole cooking gets done in a pressure cooker and saves a lot of time.

Sometimes I also make this Keerai kootu which is also a family favorite. This too gets easily done. The difference is that the kootu spice mix is roasted and ground and then added to the dish. For the keerai sambar, I use regular sambar powder.

Also for keerai kootu we don’t use onion and garlic, But for this sambar I add both these.

Another difference is – for keerai sambar I add tomatoes and use moong dal. For Kootu we don’t add tomatoes and use toor dal.

Now let’s go to the preparation of this dish.

Here is how to make this simple Keerai / Greens Sambar Recipe [ Pressure Cooker Method]

Soak Moong dal in water for atleast 15 minutes. The dal will get cooked well and come together with the greens.Though this step is optional, I soak it as I start cutting the greens and onions.

Heat a pressure cooker and add oil. Once it is hot add mustard.As soon as it pops add onion and garlic and saute for a minute. Add curry leaves and broken red chilies.

Add chopped tomato and saute for a minute. Put in the moong dal along with the water used to soak it.Add turmeric powder and asafoetida powder.

Add Sambar powder,the chopped greens, salt and mix well. Add a little more water if needed. Cover and pressure cook for 15 minutes and let the pressure release naturally. Open the cooker, stir well to mix and transfer to a serving vessel.

Serve the Keerai sambar with steamed rice.

A quick sambar with greens that can be prepared in the pressure cooker.

Ingredients
  • 1 bunch Greens of your choice,cleaned and chopped
  • 1 tsp Oil
  • 1 tsp Mustard
  • 1/2 cup Moong dal
  • 1 no. Onion, chopped
  • 1 no. Tomato, chopped
  • 2 no.s Garlic cloves, chopped
  • 2 no.s Red chili , broken
  • 1 sprig Curry leaves
  • 1/8 tsp Turmeric powder
  • 3 tsp Sambar Powder [ adjust to taste]
  • 1/8 tsp Asafoetida powder
  • Salt to taste

Recipe Notes
  • I use the same method for most of the greens like amaranth, fenugreek, drumstick leaves etc.
  • Adjust the sambar powder quantity to suit your taste.
  • Since we use the country tomato variety [Naattu Thakkali] which is sour, I skip tamarind.

  1. Ever since I started using the Instant Pot, I have completely stopped using my regular pressure cookers. Now I take it out only when the instant pot is not free. The keerai sambar looks good and one pot cooking definitely saves time

  2. A green sambar ! Wow , you surely take care of the nutrition when it comes to cooking , and to cook the complete thing in a pressure cooker will make it a quick process .

    I make something similar like the dal palak thought that is completely different to your sambar. I like that you can use any greens here and the addition of sambar
