When we used to dine out in India, the first thing that we would order[ after the soup, of course] would be palak paneer and Butter naan. It has become a sort of habit that we cannot come out of.We are so fond of this combo.I used to make Palak paneer long back and then when I started trying out  other recipes, I stopped forgot all about making it at home


.When we were discussing the weekend menu, we recollected our favorite combo and I decided to make it. Each restaurant has their version of palak paneer and I recreated the one I liked in our favorite restaurant . Since I love to experiment with tofu I used it in the place of paneer.

I used:

Firm tofu- 1, block, cubed
Corn flour- 2 tablespoons
Palak / spinach- 1 large bunch
Tomato -1 finely chopped
Onion- 1 finely chopped
Green chillies- 4
Ginger garlic paste- 1 teaspoon
Cumin seeds- 1 teaspoon
Garam masala- 1 teaspoon
Oil -1 tablespoon
Salt to taste

1. Spread the corn flour on a plate and toss the tofu cubes in it.
2. Heat a little oil in a pan and arrange the cubes. Cook till the sides turn light brown. This is done so that the tofu holds its shape when simmered in the gravy Drain and keep aside. I fried a few tofu cubes for garnishing.
3. Bring to boil water in a large pot with a little salt.
4. Put in the palak leaves and switch off the flame.
5. Wait for a minute, drain the water and plunge the leaves into cold water. This helps retain the color of the greens. Puree the greens and green chillies without adding water and keep aside.
6. Heat the remaining oil in a pan and put in cumin seeds
7. When it crackles, add the onion and ginger garlic paste and sauté till the onion is translucent.
8. Put in tomato and cook till soft.
9. Add the pureed greens, salt and simmer. Add a little water if needed.
10. After 5 minutes put in the tofu cuber and simmer for 5 minutes.
11. Add the garam masala, mix well and remove from heat

Serve garnished with fried Tofu cubes.

It tasted just like the restaurant gravy and we enjoyed it with Roti.

    Very nice recipe. I remember when I was in Korea, once an Indian friend had cooked Palak and Tofu. It was nice. Let me see if I can get some good tofu in Delhi
