A super easy cake born out of the need to feed the children some made snacks for the week end. The experiment turned out into a delightfully tasty cake that the kids fell in love with!!
I used:
Makes– 12 mini bundts + 12 cupcakes
All purpose flour – 1 1/2 cups
Baking powder- 1 teapoon
Baking soda- 1/2 teaspoon
Sugar- a little less than 3/4 cup
Salt- 1/2 teaspoon
Coconut milk -200ml
Yogurt- 1/4 cup
Oil- 1/3 cup
Grated coconut- 1/2 cup
Tutti frutti-1/8 cup
Vanilla essence- 1/2 teaspoon
Take the coconut milk in a bowl.Add yogurt, oil, vanilla essence, sugar and mix well till sugar dissolves.
Sift together the flour, baking powder, baking soda, salt. Add the sifted flour to the liquid ingredients bowl. Throw in the tutti frutti and coconut.Mix and pour into greased moulds.
Bake in a pre heated oven for 10 minutes[bundts] /12-15minutes [cupcakes] / till done.Once slightly cooled remove from bundt mould and cool in a wire rack.
