Chocolate Peanut Butter Overnight Oats Recipe with step by step pictures

We are starting the month long mega marathon today and this time the theme is Protein rich dishes.

As mentioned in yesterday’s introduction post, I will be using one protein rich ingredient a week. This week , as you would have rightly guessed, the star is the humble peanut!

Though the name sounds misleading, it is a legume rather than a nut! Also known as groundnuts, these are also classified under oil crops due to their high oil content.

It is used all over the world, in various cuisines as peanut oil, peanut meal, peanut butter, boiled / raw/ roasted peanuts.

A 100g serving of peanuts contain approx – 570 Kcal and 25g protein. It has a low Glycemic index and is rich in anti oxidants too.

Coming to the first recipe of this marathon, it is this very simple, yet popular breakfast dish. It is a no cook recipe and the one that can be made ahead and stored in the fridge.

In the recent times, over night oats recipes are gaining popularity and I felt it was high time I tried one myself.

I made two jars of these over night oats, one for Lil Angel and the other one for me. I was skeptical if she would like it.But she did! And there are repeat requests to make this often!

Sometimes, such make ahead dishes do come in as a blessing in disguise. Not only as a breakfast dish but also as a filling dessert / snack!

In this recipe, I have used pomegranate and nuts as the topping. You can use chocolate chips, other varieties of fruits and any other thing that catches your fancy!
