The Blogging marathon #82’s theme this week is pretty exiting and delicious. I have chosen to make pizzas this week.Isn’t that fun!
As soon as I signed up, I made a note of some of the exotic pizza varieties that I must bake and then left it at that.It was only when I saw Srivalli’s post at the stroke of midnight,I realized I hadn’t even thought about the theme!!
I could make this  Whole wheat pizza base and prepare something like this paneer and capsicum thin crust pizza. But today, I had no time to make the pizza base so I switched over to make it with the chapathi dough that I had ready.
I had marinated a block of paneer to make a gravy dish , so used that in this recipe. The dough was from a portion which I kneaded this morning to make Chapathi for the kids lunch box.
So as you would have guessed it is a pretty simple pizza in a chapathi base! In spite of all the simplicity,I can give you reasons why this is good.
There is no waiting time to proof the dough,no need to bake,gets done fast and it tastes delicious because I used marinated paneer!
As mentioned zillion times before in this post,I have used marinated paneer here, but you can use paneer as it is if you don’t want to marinate it or want to prepare the pizza very quickly.
A quick pizza recipe with out the need to bake ,made on the stove top
- 100 grams paneer,cubed
- 1 teaspoon tomato sauce
- 1 teaspoon soy sauce
- 1 teaspoon each grated ginger and garlic
- 1 cup whole wheat flour
- 1/4 cup colored capsicum / bell pepper,finely chopped
- 1 number onion ,small,finely chopped
- A pinch or two Oregano and red chili flakes
- Tomato sauce as needed
- Mozzarella cheese as needed

Take the paneer cubes in a bowl and add tomato sauce,soy sauce, ginger, garlic and mix well. Let it marinate for at least 2-3 hours / overnight

Knead a dough with wheat flour and salt as we do for chapathi.

Divide it into two parts. Roll out one part into a slightly thick chapathi and cook properly on one side. The other side can be half done.

On the well cooked side, spread pizza sauce / tomato sauce , cheese,colored capsicum and onion and one more layer of cheese.Lower the flame and cover and cook till the cheese melts.

Now sprinkle oregano and chili flakes.

Cut into wedges and serve

Repeat for the other portion of the dough
- You can use paneer cubes as such without marinating

One down, two more pizza recipes to go. I still have no clue what I will be posting tomorrow. I am waiting for a brain wave to hit me so that my post gets done on time. The exotic pizza list has to wait for a while as I will need time to make those.

Love this chapati paneer pizza, it looks totally amazing.
Even though this might be a simple one to make, nothing can beat the lip smacking taste this chapati pizza gives..I have made this so many times and kids always enjoy it

Lovely! Though being vegan I miss out the paneer and drizzle on some tahini. We often make chapatti pizza in our house… totally agreed, it is quick and delicious! 💚
