Upma is a part and parcel of South Indian breakfast and there are many who love this dish!Though I am not a huge fan of upma, I can have it when there is no other option for breakfast. To make an upma with Quinoa was on my list for a long time and thus was born this Quinoa Capsicum Upma Recipe.
This upma was used as a filling in the Quinoa Roti Wrap Recipe that I made as a part of the A- Z Indian flatbread series last month.

Step by step method to prepare Quinoa Capsicum Upma Recipe
Heat oil in a pan and add mustard,cumin, broken red chilies and curry leaves.Once the mustard pops and the dal turns brown, add onion,grated ginger and garlic and saute till the onion turns soft. Put in the capsicum.
Saute for a minute.Let the capsicum retain the crunch.Add cooked quinoa and salt.Mix everything together and cook for 2 minutes on low flame for the flavors to blend.
Serve.
A simple and filling upma recipe with loads of bell pepper / capsicum
- 1/2 cup Cooked Quinoa
- 1/4 cup Colored capsicum,each
- 1 number Onion, finely chopped
- 1/2 teaspoon each Grated Ginger and garlic
- 1/2 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 1 teaspoon Channa dal
- 1 number Red chili ,broken
- Curry leaves- a few
- Salt to taste
- 1 teaspoon Oil

Serve as such / with a side of your choice
- You can add other vegetables as well.Carrot, beans and peas are best suited.
- Masala powders like pav bhaji masala, sambar powder will give a twist of taste to the upma.

such a healthy meal with quinoa. We call it as pulao. It taste great. I have realized making quinoa with Indian style makes it finger licking food.
