Today my blog celebrates its 12th birthday! I started this blog in 2008, a month before my Lil Angel was due!

What started as a post per week went on to a stage where I posted 4 posts a days and of late the number has dwindled again as I am not able to spend time for the blog.Anyway, now this blog is a home to 2500+ recipes! As I go back and look at those posts, I get so nostalgic and relive those days I spent trying to cook ,click and post with a tiny tot at home and later with a toddler and a new born!

Some of my best friends are those whom I got to know through blogging and we are like a family now! Blogging marathon group is more closer to me than most of my relatives!

So here I am celebrating the 12 blog anniversary with this simple coffee recipe.

When I was reading about Dairy free coffee, this was one of theoptions that sounded palatable. I knew that things would not go wrong when it had cashews yet there was a tiny hesitation at the back of the mind.

After I clicked the pics, I kept it in the fridge and had it after a while. It really tasted so good that I was not even willing to share it with anyone! Trust me on this. The pic may not look appetizing but the taste was so good!

A delicious dairy free coffee recipe

Course: Drinks
Servings: 2 people

Ingredients
  • 1/4 cup Raw cahewnuts
  • 2 teaspoons Instant coffee powder
  • 2 teaspoons Cane sugar
Instructions
  1. Soak cashews in warm water for half an hour.

  2. Drain and transfer to a mixie jar.Add instant coffee powder and cane sugar,a little water.Blend to a paste.

  3. Add more water to get the desired consistent and blend once more.

  4. Transfer to a glass and serve immediately

Recipe Notes
  • Use chilled water and serve immediately for best results.
  • You can also use water at room temperature and then chill the coffee. Whisk well before serving.
  • You can use any sweetener of your choice.
  • The quantity of Instant coffee powder depends on how strong or light you prefer your coffee.
