Anyone who knows me well,knows that I have a thing for millets! I use millets in a variety of ways and most of the times, the kids never find out!


Millets can be used in so many ways in our ever day cooking. And that’s the reason I chose – Cooking with millets as the theme for Blogging Marathon #113, Week 2.

A while back, the gym I used to go to had a group event, where they would give 2 or 3 ingredients and the members can cook and send pics using that ingredients.One of the days it was potato and cabbage.

I wanted to make spicy potato rice but on second thoughts, I felt using millets instead of rice. I made this as a one pot meal in a pressure cooker and it got done quickly.

The dish turned out awesome and I paired it with cabbage raita. The best part of neither the H-man nor the kids could guess the ingredients!

I used Varagu / Kodo Millet. Foxtail millet , little millet can also be used. We get parboiled millets here so it can be used directly for cooking. Else we have to soak the millets before cooking.

A delicious one pot meal made with millets and potato

Course: Main Course
Cuisine: Indian
Ingredients
  • 1/2 cup Parboiled Kodo Millet / Varagu
  • 2 numbers Potato, peeled and cubed
  • 1 number Onion, peeled and thinly sliced 1
  • 1 inch piece Ginger, finely chopped
  • 2 cloves Garlic, finely chopped
  • 1 number Tomato, chopped
  • 1 tbsp Oil
  • 1/2 tsp Saunf
  • A pinch Turmeric powder
  • 1 tsp Red chili powder increase if you prefer it more spicy
  • 1 tsp Pav Baji / Channa masala powder
  • 1/2 tsp Garam masala
  • Salt to taste
  • Coriander leaves to garnish
Instructions
  1. Heat oil in a small pressure cooker and add saunf.

  2. Now add onion and, ginger and garlic and saute till the onion turns translucent

  3. Add tomato and cook till mushy

  4. Now add the potato and washed millet and saute for a minute

  5. Add 1 1/2 cups water and being to boil.

  6. Then add the masala powder, red chili powder, garam masala. salt and mix well.

  7. In goes the potato too.

  8. Cover and pressure cook for 15 minutes

  9. Once the pressure releases, open the cooker and fluff up the rice gently.

  10. Serve with a garnish of coriander leaves, with a raita of your choice

Recipe Notes
    • You can use Barnyard millet / foxtail millet.
    • Pav baji masala can be repaced with sambar powder / channa masala / kitchen king Masala.

    Wow, parboiled millets so much convenient. Your millet potato rice is calling my name. Such a healthy, filling and delicious one pot meal. Yummy!!

  2. Now this is seriously something PJ, 70 different recipes are mind blowing! and you still have few more..very nice..and this recipe sounds fantastic PJ. I haven’t seen parboiled millet too ..should check when we can finally go shopping!
