This months challenge for Srivalli’s Indian Cooking Challenge took us to Punjab. We made the famous Amritsari kulchas!!! This recipe is from The Hindu and according to the article, this is a very famous dish that has less amount of refined flour and is cooked in an large open tandoor and has a stuffing.


I made this for breakfast one morning and also packed it for Lil Angel’s lunch box. I was a bit worried as she prefers Cheese chapathi to any other lunch items.But in the evening she came home and gave a big thumbs up for this dish!

I used:


For the dough

All purpose flour /Maida- 2 cups
Baking powder- 1 teaspoon
Baking soda- 1/2 teaspoon
Sugar- 1 teaspoon
Yogurt/ curd-1/4 cup
Warm milk-1/4 cup
Salt to taste

For the filling

Potato-2, boiled,peeled and mashed
Onion-1,finely chopped
Red chili powder- 1 teaspoon
Cumin powder- 1/2 teaspoon
Chaat masala- 1/4 teaspoon
Finely chopped coriander leaves- 2 tablespoons
Salt to taste

Sieve maida with baking powder and baking soda. Add yogurt,oil and salt.Mix. Add milk little by little and knead to a smooth and elastic dough.Cover and keep aside for 30 minutes.

Take all the ingredients for the filling in a bowl and mix well and keep aside.

Divide the dough and fillings into equal parts. Flatten a ball of dough and place a portion of the filling in the centre and bring the edges together. Flatten it and roll out into a circle.

Heat a griddle and cook on both sides drizzling a little oil around the edges. Remove from the griddle when both the sides are cooked and have brown spots.

Serve hot with a side dish of your choice…
