Mixed Vegetable Raita Recipe – A simple and cooling side for flavored rice dishes!

It’s been a really long time since I posted something here. Life got busy and many of the other stuffs took a front seat and hence the neglect.So, when the New year dawned, I made up my mind to drop by often and keep this space alive! And the credit for this goes to Srivalli of Cooking 4 all seasons and Vaishali of Ribbons to Pastas for pulling me back into the game!

This week in Blogging Marathon #130, I have chose the theme – One ingredient 3 ways and the ingredient that I chose is Yogurt / Curd.

Yogurt / Curd is one of my favorite ingredient and is an excellent probiotic. My love for this ingredient can been seen in the 120 Recipes with yogurt as the star ingredient! Click on the link to check out the whole array of delicious dishes starting from beverages to mains.

I am starting off this series with a very simple and no cook recipe- Raita. Pachadi / raita is a south indian condiment that is made with a yogurt base with different add-ons and served as a side with briyani or flavored rice varieties.

Mixed vegetable Raita recipe is very easy to prepare and is an excellent side with any flavored rice , pulao or briyani.

Mixed Vegetable Raita Recipe

A quick and simple side for flavored rice dishes

Course: Indian Side
Cuisine: Indian

Ingredients
  • 1 cup Fresh , thick curd / yogurt
  • 1/2 cup Chopped / grated Mixed vegetables [ carrot, cucumber , raw mango, onion, tomato
  • 1/2 tsp Roasted cumin powder
  • Salt to taste
  • Chili powder as needed
  • Coriander leaves to garnish
Instructions
  1. In bowl, take curd and salt and whisk well.

  2. Just before serving, add the grated / chopped veggies and mix

  3. Transfer to a serving bowl.

  4. Sprinkle roasted cumin powder, red chili powder

  5. Garnish with coriander leaves

  6. Mix gently and serve as a side

Recipe Notes
  • I used a mix of grated and chopped vegetables.
  • Can be had as a snack as well.
  • Tastes best when served chilled[as a snack]
  • Instead of roasted cumin powder, chaat masala can be added.
  • I did not season / give tadka for this raita. If you prefer tadka, you can heat a little oil and season with mustard,cumin seeds, broken red chilies, curry leaves and pour over the raita.

    Can’t live without yogurt. A must have at home and this mixed vegetable raita sounds so interesting. I have usually just made it with one or two vegetables, but adding mixed vegetables sounds very interesting and I can serve it as side with any dish.
